Chardonnay
The Paradise Enough chardonnay is a good example of a balanced, well structured wine from a cool climate vineyard, made with care and attention to detail. Although never filtered, it displays a bright straw colour. The nose is complex with creamy components of barrel fermentation and extended lees contact, but also with perfumes of hazelnuts and some citrus. The palate is long and balanced showing definition from well handled oak maturation without any coarse oak flavours.
 
Pinot Noir
A premium wine made in the traditional Burgundian manner, with whole bunches pressed underfoot in open fermenters. This is an excellent example of how South Gippsland can produce pinots of world standard. Not as dark as other red varieties, the colour is vibrant and appealing. The nose is delightful , showing a perfume of wild fruits and some sweet wood. The palate is well rounded with natural acidity and the characteristic sweet, silky texture of pinot ending with fine fruit tannins.
 
Cabernet Merlot

Paradise Enough produces fine, well flavoured cabernets with an emphasis on fruit flavours and a well balanced palate. In 2006 the estate Cabernet was blended with some Merlot from a small family vineyard in Leongatha North which provides even more dark berry fruit characters. NB A single barrel of Cabernet Shiraz was bottled this year and is available for a short time only.  This wine has been released under the "100 Acres" label and is ready for immediated drinking, although experience indicates that it will also cellar well for up to 10 years.

 
Sparkling
Paradise Enough vineyards produce superb sparkling wines from specially selected clones of Pinot Noir and Chardonnay planted 19 years ago. The current 2005 vintage is an equal blend of Pinot Noir from vines planted in 1988 in Serena's Vineyard especially for sparkling production and Chardonnayfrom Sue's Vineyard. After two years on bottle lees it is developing a complex toasty nose with a dry palate and good depth of flavour. This is an excellent cool climate bubbly thatdrinks equally well as an aperitif or food wine
